Sugiyama specializes in modern Kaiseki, multi-course meals. Think of it as Japanese 'pre-fixe'. Sushi is always included, and it is uniformly excellent, but it is not only sushi. Steak served on a hot stone is typically one of the courses. I have been about 4-5 times, and it is always outstanding. I have never been disappointed.
